Banana Bread

Banana bread is perfect comfort food for a sweet brunch item. If you didn't think so before, you will now!


Brunch or not, banana bread does so much to warm the soul, fill you up, and leave your kitchen smelling SO good! It's perfectly crisp on the outside and so moist on the inside. I actually think its a crime if you don't eat banana bread warm, so beware of that.

There are smells that really take you back to your childhood as we all know, however, there are some that really bring a smile to your face. One of mine is definitely the smell of banana bread baking in the oven. Its had such a hold on me and I had to find a way to recreate my mothers incredible banana bread recipe. The result? One of the beast banana breads you will ever make/taste!


Recipe Details


Ingredients:

  • 1 cup of sugar

  • 1/3 cup of vegan butter

  • 1 1/2 ripe bananas

  • 6 tablespoons of aquafaba (1 can of chickpeas) (canned chickpea liquid that has been whisked until frothy)

  • 1 2/3 cups of all purpose flour

  • 1 teaspoon of baking soda

  • 1/2 teaspoon of salt

  • 1/4 teaspoon of baking powder

  • 1 1/2 teaspoons of vanilla extract

  • 1/3 cup of water


Description:


1. To start, heat the oven to 350 degrees and grease the bottom of a bread pan. Next, melt the 1/3 cup of vegan butter. In large bowl, mash the 1 1/2 ripe bananas and mix those with the 1 cup of sugar and the 1/3 cup of melted butter 1 1/2 teaspoons of vanilla, and 1/3 cup of water and then set aside.


2. In a separate bowl, add all the dry ingredients ( the 1 2/3 cups of flour, the 1 teaspoon of baking soda, the 1/2 teaspoon of salt, and the 1/4 teaspoon of baking powder) and mix thoroughly. Add all the contents from the other bowl of wet ingredients and mix everything well.


3. In a standmixer, or by hand if you are brave and want a workout, mix/beat the liquid from 1 can of chickpeas until you have reached a frothy consistency; similar to that of beaten egg whites. Add 6 tablespoons of the beaten, frothy mixture (aquafaba) to the, now mixed, wet and dry mixture. Fold the aquafaba into the mixture until equally distributed.


4. Pour in the mixture to the greased bread pan and cook in the oven for about 45 - 55 minutes or until a toothpick inserted in the middle comes out clean. Let sit for about 5 minutes, then dig in! Enjoy!
