Shakshuka

If you, like me, LOVE to clean your plate with some bread after a really good meal, then this is the recipe for you. Who wouldn't love an excuse to scoop all of this up with some toasted bread?


This tomato, onion, and pepper mix is so good, the only issue with it, is how fast it gets eaten up. Whether you choose to serve this up family style, or keep it all to yourself, this is such a flavorful dish that'll leave you wanting more.

I feel that one of the best parts of this dish are all the spices that go into this that really give your tastebuds a small taste of flavors from the Middle East and the Mediterranean. The flavors are spicy from the sumac, chili flakes and paprika, sweet from the yellow onion and tomatoes and peppers, and fresh and tangy from the vegan feta and cilantro. Only thing missing is some bread!


Recipe Details


Ingredients:


  • 3 whole large tomatoes

  • 1 red bell pepper

  • 1 small yellow onion

  • 3 cloves of garlic

  • 1 table spoon of tomato paste

  • 1/2 teaspoon of red chili flakes

  • 1 teaspoon of paprika

  • 1 teaspoon of cumin

  • 1/2 teaspoon of cinnamon

  • 1 tsp sumac (optional)

  • 1/2 tablespoon of salt

  • Vegan feta (optional)

  • 1/2 cup of cilantro


Description:


*Prep all of these before cooking to make the process a lot easier*

1. Slice the tomatoes into roughly 1/2 inch even slices. Mince the garlic cloves. Dice the onion and pepper into small cubes.


2. Into a pan, add olive oil and let heat up to medium heat. Add the garlic and the pepper to the pan and cook for 2 minutes. Add the diced onion to the pan and let cook until the peppers begin to get soft, and the onions start to become translucent. Remove from the pan and set aside.


3. Into the same pan, add another 2 tablespoons worth of olive oil and place all the sliced tomatoes flat in the pan. Flip the tomato slices every so often to prevent them from charing. Let the tomatoes cook down until very soft and almost a chunky sauce consistency.


4. Add the onion, garlic, and peppers back to the pan and mix everything until homogenous. Continue to cook until all of the water from the tomatoes has evaporated and a thick tomato consistency has been achieved.


5. Chop up cilantro and garnish along with some vegan feta and drizzle of olive oil and some optional harissa for some added spice. Grab your bread, toast it up, and enjoy!
