Pad Thai

I could eat Pad Thai everyday and be very happy. Try this and I am sure you will feel the same way!



I feel like the first dish that people think of when they hear Thai food, it is almost always Pad Thai. Now, that could be because of the countries name in the title, but I'd like to think that this is one of the many delicious dishes that Thailand has to offer.

This is such a well known and classic dish that I had to make it! All of the ingredients really come together to create such an incredible dish that so many have come to love. I think its for this reason that I chose to make a very large portion and share it in a family-sized platter for my friends!


Recipe Details


Ingredients:


  • 6 ounces of flat rice noodles

  • 4 garlic cloves

  • 1 shallot

  • 1 package of extra firm tofu

  • 1 cup of bean sprouts

  • 1 cup of green onions

  • 3 limes

  • 1/2 cup of dry roasted peanuts


Ingredients for Pad Thai Sauce:


  • 2 tablespoons of soy sauce

  • 2 tablespoons of tamarind juice or paste (rice vinegar can be used as a substitute)

  • 1 tablespoon of Samba Oelek or Sriracha

  • 3 tablespoons of brown sugar


Description:


1. Start by placing the noodles in a bowl with some warm water poured over top and set aside. In a small bowl combine the soy sauce, tamarind juice (rice vinegar), Samba Oelek and the brown sugar and mix together until homogeneous, then set aside.


2. Mince garlic, slice the shallot into even slices and chop green onions into roughly 1/2 inch pieces. Next, pat tofu dry and cut in half. With one half, cut into even cubes and set aside.


3. In a large pan (wok) start by putting some vegetable oil into the bottom of the pan and let it warm up. Add the cubed tofu to the pan and let the tofu fry, flipping regularly to keep tofu from burning.


4. Add the garlic and shallots to the pan and let cook with the frying tofu. As soon as the garlic begins to turn slightly tan (after a minute or so) add the strained noodles to the pan and mix all together.


5. With the other half of the tofu, break off pieces straight into the pan and let cook with everything.


6. Next add the Pad Thai sauce to the pan and mix everything thoroughly until all of the noodles and tofu are evenly coated.


7. Add the green onions to the pan and while they cook down, place your peanuts into another dry pan and toast the peanuts mixing them to prevent burning. After 3 - 4 minutes, pull them off and set aside.


8. Once the green onions have had time to cook down, move to a platter. Add the toasted peanuts, the bean sprouts and any left over chopped green onions to the top as a garnish. Enjoy!
