Most people would say the feta is the best part of a Greek Salad. I think this recipe challenges that!
Just one look at it and it screams fresh! So healthy, and yet it is packed with so much flavor, it's such a simple way to kick off Summer salads. Salads like this go a long way in satisfying your palate and making you go in for a second serving!
It's harder and harder to find salads today that aren't littered with added cheese. It almost feels like the cheese is the main part of the dish and the veggies are brought as the garnish. Admittedly an exaggeration with the example, however, I am not exaggerating one bit when I say that this Greek Salad will change the perspective you had before on what the best part of the salad is. You'll completely forget feta was even part of the traditional recipe.
Recipe Details
Ingredients for dough (dry):
3 large tomatos
1 red pepper
1 whole cucumber
1/2 cup of Kalamata Olives (Optional)
1 whole large lemon
2 teaspoons of Salt and Pepper to taste
2 tablespoons of olive oil
Description:
1. Arguably, this is the simplest recipe I have on here. Into a large serving bowl, cut all 3 tomatoes into small cubes, along with the 1 pepper that has been diced as well. This is a point where the Kalamata olives can be added if you choose. Lastly with 1 large cucumber, slice into cubes and add them to the same bowl.
2. In a separate and smaller bowl, mix 2 tablespoons of olive oil, 1 lemon and 2 teaspoons of both salt and pepper. Mix really well and taste adding more salt and pepper to your liking if necessary.
3. Once the lemon and olive oil dressing is done, pour over the top of the tomatoes, cucumber, and pepper. Mix thoroughly and let sit in the fridge for at least 20 minutes to let the flavors marinate and deepen.
4. Once the salad has had time to sit, all there is left to do is enjoy it!
