Moroccan Tabbouleh

How could you not want to eat this whole bowl by yourself?! Its healthy, simple and SO flavorful!


Theres really something special about a good tabbouleh that can make it the star of any Middle Eastern dinner. Fresh from the cucumbers, tomatoes and parsley, and even more deeply flavorful from the lemon and olive oil. And the best part, it is SO easily made!

Growing up, we had friends and family from every corner of the world come over for dinner so I was always exposed to new dishes, flavors and spices. This tabbouleh was a dish that always had me standing up to get another helping. It is so filling, and yet feels so fresh and healthy. So simple and yet so delicious, your guests will want the recipe!


Recipe Details

Ingredients:

  • 1 cup of uncooked couscous

  • 1 large cucumber

  • 2 large tomatoes

  • 1 bunch of parsley

  • 1 1/2 lemons

  • 3 tablespoons of olive oil

  • 1 tablespoon of salt

  • 2 teaspoons of pepper

*One of the best things about couscous is how quickly it cooks. Follow the directions for cook time as indicated on the box.


Description:

1. Start by cooking the couscous with 1 teaspoon of salt for the cook time indicated on the box. Once the couscous is done cooking, put all of it into a bowl and place in either the fridge or the freezer to rapidly cool down. cutting the cucumber and the 2 large tomatoes into small cubes. Next, chop


2. In the meantime, cut the cucumber and the 2 large tomatoes into small cubes and put into a serving bowl. Next, chop the bunch of parsley and add that to the bowl as well.


3. Once the couscous has cooled, add it to the serving bowl with the tomatoes, cucumber and parsley and mix well.


4. To finish off the salad, add the juice of 1 1/2 lemons, the 3 table spoons of olive oil, the 2 teaspoons of pepper and the tablespoon of salt and mix all of it together. If you are able to resist eating the whole bowl, leftovers are really good as well! Enjoy!
