This is such a simple salad and yet it packs so much flavor, I promise it will wow any guest you invite over!
There are so many flavors at work here, from the sweetness of the grapefruit, the creamy texture from the avocados, the spice from the chickpeas and the nuttiness from the tahini dressing! All of these work to create such a simple and yet elegant salad, it will surely be a crowd pleaser!
There are so many variations that can be done with this salad, but I thought this was a great one to start off with. Ive made it so many times and every time, it leaves you feeling satisfied but also wanting more. I have loved making this for family dinners, or when I have guests over. It feels fancy but is so simple!
Recipe Details
Ingredients:
1/2 grapefruit
1 whole avocado
1 can of chickpeas
2 lemons
2 tablespoons of tahini
1 tub of mixed greens
2 tablespoons of paprika
1 tablespoon of olive oil
2 teaspoons of salt
1 1/2 teaspoons of pepper
Description:
1. To start, open the 1 can of chickpeas and strain out all of the liquid. Next, on a baking sheet, spread out all of the chickpeas so there are none on top of the others. In a small bowl, mix the 2 tablespoons of paprika, 1/2 the juice of one lemon, 1 teaspoon of salt, and 1 tablespoon of olive oil. Mix well and then pour over the chickpeas. Using either your hands or a spoon, thoroughly coat each chickpea with the mixture until everything is evenly coated. Next, in a 375 degree oven, let the chickpeas bake for about 15 minutes, moving the chickpeas around on the pan every couple of minutes to prevent them from burning.
2. As the chickpeas bake, in a jar or a bowl, mix the 2 tablespoons of tahini along with the other 1 teaspoon of salt, 1 1/2 teaspoons of pepper, and the juice from the 1 1/2 lemons. Mix all of these together until a smooth dressing consistency is achieved. If its too thick, add a small amount of water and mix or tahini if it feels more liquidy than you prefer.
3. Next, cut the 1 avocado in half, removing the pit, then carefully peel off the skin and slice both halves length wise into even wedges. Cut the 1 grapefruit in half and peel off the rind as well. Pull apart each wedge and then split them in half.
4. Once the chickpeas are done baking, pull them out and let them cool while you assemble the salad. To a serving bowl, put the 1 tub of mixed greens, the avocado wedges, and the grapefruit pieces. Pour all of the chickpeas on top, and mix well. Add the tahini dressing on top, mix again, and serve! Enjoy!
