Butternut squash soup is hearty, light, and the perfect meal for a rainy day. And it's easy to make!
Whether its actually raining outside or you are just craving a hearty soup, that is both filling and light, squash soup is the best choice. Capable of warming any soul or making a rainy day that much more enjoyable!
While visiting family recently, and seeing the stormy weather outside, I thought the perfect meal would be a warm bowl of soup to make things feel even more cozy. This soup is light, but will fill you up leaving you feeling satisfied. A combination that allows you to go for serving after serving and never feel it weighing down in your gut. The best part, it is SO easy to make!
Recipe Details
Ingredients:
1 whole butternut squash
1 yellow onion
3 cloves of garlic
3 teaspoons of salt
3-4 cups of water and + 1 bouillon cube (or equal amounts of vegetable stock)
1 1/2 tablespoons of curry powder
Black pepper to taste
Description:
1. In a large pot, add the vegetable stock and begin to warm up
2. Deseed and cut the butternut squash, along with the onion and garlic cloves into smaller manageable pieces and place into the pot of vegetable stock
3. Let the vegetables cook in the stock until very soft. Using a fork, poke the vegetables to make sure they are soft.
4. Using a hand blender or a regular heat proof blender, blend all of the contents from the pot until you reach a thick soup consistency.
5. Once you have reached the soup consistency, mix in the curry powder, the salt and the black pepper and let cook for another 5 minutes on medium heat. Continue mixing to keep the soup from burning to the bottom.
6. Now serve the soup with an optional squirt of lemon, and ground pepper on top. Double check you have bread to soak up the leftover soup and enjoy!
